FOUL (FAVA BEANS) WRAPS

Makes 2 wraps

Ingredients:⠀

Foul:⠀
1 can fava beans, drained ⠀
1/3 cup water
1 tsp turmeric powder⠀
1/2 tsp cumin powder⠀
1/2 tsp onion powder
1 tsp paprika powder
2 garlic cloves, minced
1/2 lemon, juiced
Salt and pepper (optional)

Salsa:⠀
1/2 medium cucumber, diced
1 tomato, diced⠀
1/2 red onion, diced⠀
2 asparagus stalks, chopped⠀⠀
1/2 lemon, juice⠀
1/4 cup parsley ⠀

1 cup spinach
1/2 avocado, sliced
2 flatbread wraps (GF)


Instructions:⠀

Pour the fava beans into a colander to drain. Rinse the beans in cold water.

Add the fava beans and water to a medium size pan and cook for about 5 minutes on medium heat.

Season with salt, pepper (if desired) and cumin. Cook for another 5 minutes, then add the turmeric, paprika, onion powder and garlic. Cool for another couple minutes than and the lemon juice and set aside.

Now make the salsa, rinsing all the vegetables and cutting into the shapes as listed in the ingredients section. Place them all in a bowl, add the lemon juice and mix well.⠀

Get a large plate, place the flatbread wrap on it and layer your wrap with spinach, salsa, avocado and the foul, then wrap it up.
