For anyone who knows me kasundi or Bengali mustard is one of my favourites.
These spicy baby potatoes are yummy and easy to make. You can have it as a snack or make it part of your meal. If you want to try it here’s the recipe
Ingredients
* 400g baby potatoes par boiled and fried
* 2Tbsp mustard oil
* 1 onion finely chopped
* 2 bay leaves
* 1 Tsp cumin seeds
* 1/2 Tsp chilli powder
* 1/2 Tsp cumin powder
* 1/2 Tsp garam masala
* 1Tbsp ginger garlic paste
* 1Tsp lemon juice
* 1Tsp Sugar
* 2-3 Tbsp Kasundi
* 3-4 Green Chillies
* 1/3 Cup coconut milk mixed with 1/3 Tsp corn flour
* Salt
Method
* Heat the oil till it smokes. Add the cumins seeds and the bay leaves till it starts to splutter
* Mix in the onions and let it brown a little.
* Put the cumins powder, chilli powder, ginger garlic paste
* Add a spice of sugar to caramelize it
* Sprinkle some water so the spices don’t burn
* Add the potatoes and let the masala coat them
* Pour in the coconut milk and let it cook down. It should start to dry.
* Spoon in the kasundi and mix well
* Sprinkle some salt, sugar, lemon juice and let the gravy cook down. It should get dryish.
* Garnish with green chillies & coriander leaves & serve.
