Food experiments are so much fun!

After finally being able to eat oats again last year (thank you so much, insulin! 😋) I simply couldn’t get enough of my oatylicious breakfast.

The #foodvarietychallenge hosted by @suesdmoraes and myself has made me change up my meals with different ingredients and flavours. But the breakfast oats were still on heavy rotation!

So I challenged myself to change that!

I discovered quinoa can be turned into porridge too! 🤣😋🥳

I simply boiled 40g of rinsed quinoa in 200ml of plantbased milk, added in a quarter of a diced apple and let it simmer for 13min (the time on the package). This resulted in a beautiful creamy porridge 🤤

Of course I added a bunch of topping: a quarter apple (sliced), blueberries (frozen and reheated), walnuts and a dollop of yoghurt.

It was a delicious and filling breakfast for these currently cold mornings!
