Serves 4 as a side dish, or add to your party snack table with a bowl of tortilla chips.
Avocado and Tomato Salad with Crispy Corn🥑🍅
1/4 c. extra-virgin olive oil
Juice of 1 lemon
1/4 tsp. cumin
Freshly ground black pepper & salt to taste
3 avocados, cubed @eatsavoursnacking Crispy Corn
In a small bowl, whisk together oil, lemon juice, and cumin. Season dressing with salt and pepper.
In a large serving bowl, combine avocados, tomatoes, cucumber, jalapeño or capsicum and coriander. Gently toss with dressing.
Just before serving, sprinkle Crispy Corn over top of salad.
Make it your own:
If you have extra veggies in the fridge that need to be used, you can easily switch up this salad. Swap out the cucumber for sautéed zucchini or add in some chopped grilled asparagus. Some shredded purple cabbage would make it even more colourful. Give the dish more of a Mediterranean vibe with oregano instead of cumin and add some feta!
