Following on from our #plantbasedparty campaign, I’ll start with featuring this recipe:
Roshini Maharaj’s Black Bean Salad recipe is:
1 can black beans rinsed
1 can corn not creamed variety, rinsed
1 small red onion finely chopped
2 cups of baby spinach chopped
1/2 avocado diced
1 cup of diced baby carrots, cucumbers, radishes, bell peppers, tomatoes – add as many fresh vegetables as you have available
1/4 cup chopped walnuts
1/4 cup pumpkin seeds
Juice of 1 lemon, salt, pepper, 1Tbsp tahini – whisk together and add a little water to make it runny
Pour dressing over salad ingredients and toss until well coated. Allow the salad to stand for about 30 minutes to allow the flavors to soak in.
Serve at room temperature with wraps of your choice smeared with a little hummus 😋.
