in need of a good sleep in tomorrow. happy friday everyone. 🌞needed a bit of rejuvenation after these last few weeks and this salad did that for me. here are the deets for this bowl and if you’d like the dressing recipe, you can find it on my blog 👇🏽⠀
massaged kale, diced up boca spicy chik’n patty, roasted beets, cucumber and my ginger green goddess dressing. 🥒 the kale was massaged in a few tbsp of the dressing. 🥗massaging your greens might sound weird, but it helps makes the greens tastier and easier to digest. rub the greens between your fingers with some salt, acid and fat to help break down some of the fibers in the greens to make them softer and easier to digest. 🥣 takes a few minutes, but you’ll notice your greens start to shrink in size and it makes kale taste amazing. 🥬⠀
ginger green goddess dressing⠀
1 small avocado, pit removed and scoped out of skin⠀
1 tbsp nutritional yeast⠀
1/4 cup fresh cilantro, packed⠀
1 spring onion, roughly chopped⠀
2 cloves garlic⠀
1 inch fresh ginger⠀
1 tbsp yellow mustard⠀
2 tsp maple syrup⠀
juice of 1 lime⠀
zest of 1 lime (optional)⠀
salt to taste⠀
3/4 cup water⠀
add all ingredients in the order listed to a blender or food processor. set to blend on high speed until completely smooth. if too thick for your liking, adjust water by adding 2 tbsp at a time to the dressing and blending again. once dresing is to your liking, pour dressing into a resealable container and place in fridge to completely cool before using. dressing will keep for 4 days in the refridgerator⠀
