Fluffy vegan pancakes! Recipe below.

I’m about to get my period and PMSing hard. Literally anything I see I crave. This time it was pancakes. And today was the first time I Actually succeeded in making vegan pancakes!

*Recipe makes about 3 small pancakes as shown in the picture*

Ingredients:

2 1/3 cups of soy milk*
1 tbsp vinegar (I used white balsamic, but I think it may be even better with apple cider)
1 cup of plain flour
1 heaped tbsp baking powder
1/4 cup of sugar (I used one sachet of vanilla sugar and filled the cup up with plain sugar. You can substitute vanilla sugar with 1 tbsp of vanilla extract)
Oil for frying

Instructions:

1. Mix the soy milk and the vinegar (and vanilla extract if you’re using it), whisk and let it sit for a few minutes. The vinegar may make the milk a bit thicker.
2. Add all your dry ingredients and whisk until everything is smooth. *You may need to add a little more soy milk if the batter is too thick.
3. Heat a frying pan with a bit of oil and add some of the batter. Fry over medium low heat until the bottom side is golden brown. Flip and fry the other side over low heat until the pancake is cooked and golden on the outside. Done!

I added lingonberry jam in between the pancakes, as well as cherries and caramel syrup on top.
