Fluffy vegan blueberry pancakes πŸ₯ž

INGREDIENTS (4 pancakes)

* 90g flour spelt
* 1 tbsp corn starch
* 1 tsp baking powder
* 15g ground flaxseed
* Pinch salt
* 120-140g milk alternative
* 2 tbsp maple syrup
* 1 tsp vanilla extract
* 1/2 cup blueberries
* Coconut oil or oil (for frying)

INSTRUCTIONS:

* Mix the flour, corn starch, baking powder, flaxseeds, and salt in a large mixing bowl and whisk well until no lumps remain.
* Pour in the milk, syrup, and vanilla extract. Whisk everything together until the batter is thick and smooth, but still slightly pourable.
* Add the blueberries (frozen or fresh).
* Set the batter aside to rest for 10 mins.
* Heat up a small frying pan with coconut oil or oil.
* Pour 1/4 cup batter for each pancake and let them cook until they are golden, flip over and cook the other side.
