First time making homemade cauliflower fry rice with chutney🌱🌶

Ingredients:
1 medium cauliflower finely diced
1/2 onion (I used red onion) diced
3 garlic cloves finely diced
2 teaspoons of Trader Joey’s mango ginger chutney (or favorite brand)
2 teaspoons of olive oil (or your favorite cooking oil)
1 (12 oz) bag of frozen mixed veggies
1 serrano pepper diced (add half if you don’t like it too spicy
Salt & Pepper to taste

Preparation:
On a large pan add oil at medium heat, sauté the onions until tender (3-5 min), then add the garlic, serrano pepper, chutney, salt, pepper and sauté for 2 min. Add the cauliflower and frozen veggies. Continue to mix and cook for 10-12min or until most of the liquid has evaporated. Enjoy!
