Finding a good bread substitute can be hard when you’re trying to eat less gluten and also being vegan. This dense loaf is incredibly easy to make and VERY filling, and makes a great vehicle for all of your usual toppings.

Ingredients:
1.5 cups almond meal
1/3 cup sunflower seeds
¼ cup chia seeds
1/3 cup hazelnuts
1/3 cup almonds
½ cup ground flaxseed
½ cup water
2 tbsp green banana flour
1 tsp baking soda
¾ cup almond milk
1/3 cup olive oil
1 tbsp apple cider vinegar
Pinch salt

Method:
Mix the flaxseed and water until well combined, pop in the fridge for 10 minutes.

Place all dry ingredients in a food processor (I used my vitamix as I already had it on the bench and it worked perfectly). Pulse a few times to blend everything together. Transfer to a large bowl.

Mix in all of the wet ingredients – don’t forget the flax in the fridge.

Pour into a lined loaf pan and let rest for 10 minutes.

Bake in a preheated 180 degrees celcius oven for 50 minutes.

ALLOW TO COOL COMPLETELY before removing from the tin.

Store in an air tight container for up to 5 days – preferably in the fridge.

I served mine for brekky with @coyo coconut yoghurt, fresh juicy strawberries and a generous drizzle of maple syrup. YUM. ☺️
