Finally managed to track down the @nushfoods cream cheese (actually amazing take all my money🤤), so had to use some in yet another pasta bake! This is topped with the Ilchester Mature cheese from the @ilchestercheese Vegan Festive Selection – not sure if I’ve just gotten used to that weird vegan cheese texture but I thought it was pretty good🧀

TOMATO PASTA BAKE (1 serving):
• One serving pasta
• 2.5tbsp cream cheese (I used @nushfoods natural)
• 1tbsp tomato puree
• 2tbsp oat milk
• 1tsp paprika
• Pinch of black pepper
• As much cheese as your heart desires
> Preheat oven to 180’C
> Start cooking your pasta
> While you wait, mix the other ingredients (except cheese) in a small bowl
> Drain pasta once cooked and stir through the sauce
> Transfer to baking dish and top with cheese & more black pepper (optional)
> Bake for around 20mins, until top starts to crisp
> Leave to cool slightly, then enjoy!
