Festive Brussel Sprouts

This is hands down my favourite Christmas dish! I am someone who passionately hates brussel sprouts but I was determined to enjoy them so a few years ago I came up with this recipe that I fell in love with. This has made an appearance on my IG page for a few years before Christmas and this is yet another attempt to get you to try this recipe because I am just so proud of it!

Ingredients: All from @sainsburys
Brussel sprouts: 13-14 large cut in half
Onion: 1
Cumin seeds: ½ T
Xylitol or sugar: ½ T
Balsamic vinegar: ½ T
Cumin powder: 2 t
Cayenne powder: 2 t
Smoked paprika: 2 t
Toasted pine nuts: 2 T
Toasted pistachio: 2 T
Dried currants/dates/cranberry: 1
Olive oil: 2 T
Salt to taste

Method:
-Mix brussel sprouts with 1 t of smoked paprika, cumin and cayenne. Drizzle with 1 T olive oil. Place on a baking tray cut side down and roast in a preheated oven at 180C for 20 mins
-Turn brussel sprouts around after 20 minutes and place under the grill fir 5-7 minutes till the tops are charred
-Heat olive oil in a pan and add cumin seeds, onions, sugar and balsamic vinegar. Cook frequently stirring till onions are caramelised.
-Add roasted brussel sprouts and add 1 t of smoked paprika, cumin and cayenne.
– Mix to combine then add toasted nuts and currants
