Fermented Black Bean & Garlic Tempeh Bowl An easy and super satisfying recipe to try out!

Ingredients (serves 4)
300g Tempeh
450g Frozen Broccoli (florets)
1 Large Red Capsicum (diced)
4 Cups Bok Choy (roughly sliced)
1 ½ Cups Rice (uncooked)
¼ Cup Fermented Black Bean & Garlic Paste
2 Cups Vegetable Liquid Stock
2 ½ Tbsp Corn Flour (adjust for desired consistence)
Salt and Pepper to taste
Cold Presed Olive Oil Spray (optional)
Chili to Garnish (optional)

? Directions

1. Cook the rice as per packaging directions and set aside.

2. In a steamer steam the tempeh block for 10 minutes. Once the tempeh has cooled down slice it into long strips.

3. Lightly spray a large non-stick pan with oil and on a medium/high heat add the tempeh, capsicum and broccoli florets and sauté for 5 minutes.

4. Reduce the heat to medium and add in the bok choy and black bean and garlic paste, mix well. Cook for an additional 3 minutes.

5. Add the liquid vegetable stock and corn flour and combine well. Reach a simmer the reduce the heat to low/medium stirring frequently until the sauce has thickened.

6. Serve on a bed of rice and garnish with chili, salt and pepper.
