Felt like making a quick vegan mac & cheese. I didn’t have any shredded cheese on hand so I just used a package cheddar slices. Rub some vegan butter in the baking dish, add a cup and a half or more of extra creamy oat milk. Put some garlic powder, onion powder, black pepper, onion, garlic salt. Peel off six slices of the cheese and put them aside, take the other slices and break them up into little pieces, and mix them in with the other ingredients in the baking dish. Add a tablespoon of corn starch. Boil 12 ounces or a pound of whatever macaroni you like, drain and rinse it for a minute under cool water. so it’s not so hot and doesn’t absorb the liquid. Mix the pasta with the other ingredients, take those six slices of cheese you put aside and place them on top, sprinkle some Italian breadcrumbs liberally on top. Spray with a little canola oil if you want, and bake at 350°F for about 45 minutes. Not fancy, but sure taste good to me:
