This bowl displays the 3 most prominent colors of fall orange, yellow, and green! I really live how colorful this is. The sauce color was completely by accident as well.

I made an amazingly creamy pumpkin spinach pasta sauce to go on top some @eatbanza red lentil fusilli! It was so good I had it for breakfast!

Amazingly Creamy Pumpkin Spanish Pasta Sauce

πŸŒ€1/4 cup cashew (soaked in hot water for at least 20 minutes)
πŸŒ€1/2 cup pumpkin purée
πŸŒ€1/4 cup tomato purée or crushed tomatoes
πŸŒ€2 cloves garlic and a pinch of salt
πŸŒ€oregano, basil, rosemary, and parsley
πŸŒ€3 tbsp nutrition yeast

Blend all ingredients in a blend until creamy and smooth. Serve on top of pasta of choice with tomatoes and peppers 😊!
