EVERYTHING BUT THE BAGEL MUSTARD ROASTED TEMPEH!!🥓
if you saw my story a couple of days ago, you know that i was roasting this stuff and it low key smelled like subway!! does anyone else know that smell when you first walk in or is it just me??🙋♀️ oh well, but besides the point, i’m stoked to share this super easy recipe with you guys because the marinade is super versatile and it’s my go base for a lot of my lunches and dinners!!

for the tempeh:
🥓@lightlifefoods tempeh cut into thin slices (steamed for 10 minutes, helps soak in marinade and becomes less bitter)
🥯spoonful of everything but the bagel seasoning mustard from @naplescanningco (you could also use normal mustard with EB seasoning)
⚫️3.5 tbsp liquid aminos (or soy sauce)
🍁small splash of maple syrup
🍋juice from 1/2 a small lemon
for the roasted veggies:
🧅1 small onion julienned (cut in strips)
🌶1 red bell pepper cut in strips and then in half
🧂spices: salt n’ peppa, italian seasoning blend, little bit of avocado oil for roasting
🥬kale, de-stemmed and massaged in a splash of lemon juice (doing this with your hands helps break down the cell walls in the kale so it’s easier to eat and digest!)
🍋lemon dill @ithacahummus mixed with water for the EASIEST and BEST salad dressing!!
1. preheat the oven to 425 degrees F and line 2 baking sheets with parchment paper
2. mix marinade ingredients in a bowl and brush onto tempeh strips, which are lined flat on first pan
3. then coat all the veggies in spices with small splash of oil (optional) on other pan and roast everything in the oven on the top rack for 25 minutes (or until veggies are roasted and tempeh is crispy)
4. assemble bowls with side salad, hummus dressing, and/or some cooked brown rice!
