Everyone loves babaghanouj…but how about babaghanouj with smoky, spicy caramelized butternut squash? Just made this delicious version with the vegetable of the season and your going to love it. I added some walnuts a spoonful of yogurt (use a vegan if preferable). Let me know what you thinkπŸ™ŒπŸ» in the comments below πŸ‘‡πŸΌ

π—œπ—‘π—šπ—₯π—˜π——π—œπ—˜π—‘π—§π—¦

1/2 butternut squash cut in squares
1/4 ground walnuts
1/2 tsp salt
1tbsp yogurt
1/4 tsp Aleppo pepper
2tsp Cajun spice
2 tbsp olive oil

Tahini Sauce:
2tbsp white tahini
Juice of two lemons
2tbsp water
1 crushed garlic

1. Place the butternut squash in a baking tray and sprinkle the Cajun spice and add the olive oil and rub well so all the butternut squash is coated well. Bake in the oven on 180C for 30 minutes.
2. In a medium sized bowl mash the butternut squash until it is a very mushy consistency.
3. In a small bowl add the tahini and lemon juice and mix until it is very thick and turns white. Add the garlic and the water 1 tsp at a time mixing all the while. Add the yogurt and mix some more until all is incorporated.
4. Pour the tahini mixture on top of the mashed butternut squash and add the rest of the ingredients and mix. Garnish with chopped parsley and paprika.
