“It seems simple, but it’s perfectly balanced… from the russet potatoes (skin on, of course) to the spicy black bean mix and silky sour cream! It’s great on its own or with a big side of broccoli or spinach. I just never get tired of the flavors… the peppers, spices, fresh cilantro, lime juice… yummm. And nutritionally, it stacks up too: simple ingredients combined in an extremely tasty way, with no added oil. I’ll eat this a few times every time it comes around in the weekly rotation!”
