Ever had a cake baking fail where the taste or texture wasn’t what you’re expecting? ? Here’s an awesome chocolate cake-rescue recipe from the food creator, Anthea of @rainbownourishments ??⁠

LEFTOVER CAKE BROWNIES⁠
Base ingredients:⁠
3 cups leftover cake⁠
1/2-1 cup vegan chocolate, melted⁠
1/2 cup cocoa powder⁠
1-2 teaspoons baking powder⁠

Depending on the texture/taste of the leftover cake:⁠
1/2-1 cup coconut sugar (if the original cake needs to be sweeter)⁠
1/2 cup vegan butter or oil (if the original cake is too dry)⁠
3 chia/flax eggs (if the original cake is too crumbly)⁠
Plant-based milk, as needed⁠

1. Preheat the oven to 160°C.⁠
2. Break the leftover cake into chunks, add to a food processor and process until it forms rough crumbs.⁠
3. Add the melted vegan chocolate, cocoa powder and baking powder to the food processor. Process until combined.⁠
4. Add coconut sugar, vegan butter/oil, chia/flax eggs and milk to taste and process again. The mixture should be a thick paste or the consistency of thick cake batter. If not, ‘eyeball’ the mixture and add wet or dry ingredients to get to your desired consistency.⁠
5. Scoop the batter into a lined brownie tin or muffin tin.⁠
6. Bake the brownies for 12-15 minutes or until the sides have cooked. Let the brownies cool in the tin, decorate slice and enjoy!
