Even if you’re not much of a morning person, these gluten-free oat pancakes with @pitayafoods dragonfruit-chia syrup and toasted macadamia nuts will get you stoked for waking up in the morning ?⁣⠀ 
⁣⠀ 
INGREDIENTS⁣⠀ 
⁣⠀ 
2 cups oat flour⁣⠀ 
1 tsp himalayan pink salt⁣⠀ 
1 tbsp baking powder⁣⠀ 
2 mashed bananas⁣⠀ 
1 tsp vanilla extract⁣⠀ 
1 1/4 cup + 1 tbsp oat milk⁣⠀ 
1 tbsp sunflower oil⁣ or virgin coconut oil, melted 
1/4 cup mac nuts, toasted⁣⠀ 
⁣⠀ 
DRAGONFRUIT SYRUP⁣⠀ 
⁣⠀ 
2 frozen packs of @pitayafoods dragonfruit puree⁣⠀ 
1 tbsp @navitasorganics chia seeds⁣⠀ 
1-2 tbsp maple syrup⁣⠀ 
small squeeze of lime or lemon⁣⠀ 
1 tsp arrowroot starch + 2 tsp cold water ⁣⠀ 
⁣⠀ 
1. Mix dry ingredients in a bowl. Mix wet ingredients in another bowl. Whisk together. Do not overmix. Let settle for at least 5 minutes. ⁣⠀ 

2. Pour batter into a lightly greased pan on medium-low heat until bubbly. Flip and repeat. 

3. Dry-toast macadamia nuts in a frying pan on medium heat until golden brown, stirring frequently. ⁣⠀ 
4. Prepare dragonfruit syrup: bring dragonfruit puree, maple syrup, and lemon or lime juice to a boil. Simmer until thickened, about 10-15 minutes. Add optional slurry of arrowroot starch + water toward the last 5 minutes of cooking for extra thickening, if needed.⁣ Serve with pancakes!
