Ethiopian spiced lentils 🌢πŸ‡ͺπŸ‡Ή by @betterfoodguru a great way to add some adventure to your cooking

Serves: 6-8
Ingredients:
2 cup split red lentils, 5 cups water, 4 garlic cloves minced,
1 onion diced, 1 teaspoon olive oil, 5 tomatoes chopped,
4 tablespoons berbere spice,
1/2 teaspoon cayenne pepper,
1 teaspoon salt, 2 tablespoons tomato paste, crushed red pepper to garnish

How to:
1. Boil lentils in water for 20 minutes
2. Meanwhile, fry garlic and onions in oil until toasty 3-5 minutes
3. Add chopped tomatoes, salt and cook until tomatoes release juices 2-3 mins
4. Add berbere spice, cayenne, salt and tomato paste and cook for 5 min
5. Once lentils are soft, add spiced tomato mixture to pot of lentils and simmer for 10 minutes 6. Taste for salt and adjust
7. Serve with salad of lettuce, tomato, cucumber, tomato, avocado and cabbage mixed with lemon juice and rice or millet
This dish is so super tasty, its a great one to cook on a Sunday and eat all week. It goes great with some cooked greens, some warm bread, really with anything.
