Moghli (Vegan Rice Pudding)
I’ve just perfected a moughli recipe with only 1/2 cup of sugar and 123 calories per serving (not including the nuts and coconut flakes on top)!
Here’s the recipe:
* ¾ cup rice flour
* ¼ cup Cream of Rice cereal
* ½ cup granulated sugar
* 1 tablespoon ground caraway seeds
* 2 teaspoons cinnamon
* 1 teaspoon anise powder
* 1/2 teaspoon ground ginger
* Pinch of salt
* 2 tablespoons of anise seeds
Dissolve all the ingredients except the anise seeds in 4 cups of cold water in a pan, and place the pan on low heat to start until it all dissolves. Stir continuously throughout the time the pan is on the stove.
Boil 1 cup of water, and steep 2 tablespoons of anise seeds in the cup. Strain the anise seeds, and add the water to the pan.
As the mixture cooks, you can turn up the heat to medium heat, but do it slowly.
Slowly add 1.5 more cups of boiling water to the pan as the mixture cooks.
Once the pudding coats the back of the spoon, you can take it off the heat, and pour it into seven serving dish(es) or one large dish.
Once it cools, you may decorate the pudding with soaked pine nuts, slivered almonds, pistachios and walnuts. Add shredded coconut.
