EGGPLANT PARM EXTREME🍝
This recipe is 100% the extra love involved in making it. Don’t get me wrong, it’s still so simple. Definitely give this a try if you’re looking for a way to spice up a pasta dish!
•1 cup all purpose flour (or gf)
•1/2 cup flaxseed
•2 tbsp dried oregano
•1.5 tbsp garlic powder
•1 tbsp onion powder
•1 cup water
•a sleeve of crackers or breadcrumbs
•salt & pepper to taste

•marinara (I used @raoshomemade )
•Preheat the oven to 350F
•Make the flax egg by combining the flaxseed and water in a separate bowl. Let sit for 10 minutes to gelatinize
•Combine flour, oregano, garlic powder, onion powder, salt, & pepper in a bowl. Spread breadcrumbs or crushed up crackers on a plate.
•Cut eggplant into rounds (about 1/2 inch thick) and dip (in this order) into the flour, flax egg, then the crackers. Add breaded eggplant rounds to a pan to cook until each side is golden brown
•Lay marinara sauce in a baking pan, then stack the eggplants. Put sauce and @violife_foods Parmesan on top of each. Bake in the oven for 22-30 minutes
•Lay on top of some pasta & enjoy!
