EGGPLANT PARM EXTREMEđ
This recipe is 100% the extra love involved in making it. Donât get me wrong, itâs still so simple. Definitely give this a try if youâre looking for a way to spice up a pasta dish!

Ingredients:
â˘Whole eggplant
â˘1 cup all purpose flour (or gf)
â˘1/2 cup flaxseed
â˘2 tbsp dried oregano
â˘1.5 tbsp garlic powder
â˘1 tbsp onion powder
â˘1 cup water
â˘a sleeve of crackers or breadcrumbs
â˘salt & pepper to taste

Directions:
â˘Preheat the oven to 350F
â˘Make the flax egg by combining the flaxseed and water in a separate bowl. Let sit for 10 minutes to gelatinize
â˘Combine flour, oregano, garlic powder, onion powder, salt, & pepper in a bowl. Spread breadcrumbs or crushed up crackers on a plate.
â˘Cut eggplant into rounds (about 1/2 inch thick) and dip (in this order) into the flour, flax egg, then the crackers. Add breaded eggplant rounds to a pan to cook until each side is golden brown
â˘Lay marinara sauce in a baking pan, then stack the eggplants. Put sauce and @violife_foods Parmesan on top of each. Bake in the oven for 22-30 minutes
