🔥Eggplant & OMNIMEAT Stir Fry with Spicy Sauce
A simple vegetarian stir fried dish that features OmniMeat with a rich sauce.

This eggplant recipe was inspired by the Szechuan style eggplant, also known as stir fried eggplant with “fish fragrant” sauce, or yu xiang qie zi 鱼香茄子. The term is refers to a complex Szechuan flavouring that perfectly balances spicy, savoury, sour and sweet (a combination that frequently used to season fish). Fish has nothing to do with it although the original name of the sauce includes the word “fish”.

Half packet of @omnimeat (115g)
3 small Chinese long eggplants
1 chilli pepper, chopped
1 tablespoon vinegar
2 tablespoons soy sauce
1 tablespoon spicy fermented bean paste (doubanjiang)
1 teaspoon sugar
1-2 tablespoons vegetable oil
1 tablespoon chilli oil
1-2 teaspoons ginger, minced
Salt to taste
1/8 teaspoon Sichuan peppercorn powder, freshly grated (optional, for numbing effect), or sub black pepper powder
Served with hot steamed rice 🍚 and top with fried egg (optional).
