Easy vegan. ❤️ Rich breakfast/lunch/dinner vegan omelette (farinata) (200 g pure gram flour well mix (whisk with 500ml warm water, cover bowl and leave at least for 2 hours (but better overnight).
Preheat oven to 210C. Line bottom of baking tray with good layer of olive oil, heat in the oven until smoking hot.
Remove any foam from top of the batter, stir in 2 tbsp olive oil, 1 tsp salt and pinch black pepper. I also added my favorite ingredient – yeast flakes.
Pour batter in (removed from oven) baking tray and mix in filling ingredients prepared in advance. I used – mushrooms, onions, sun dried tomatoes, olives and spinach. Distribute evenly.
Bake approximately 15-20 min until golden brown on top.
Let it cool, then cut and serve with salad or any other your favorite food.
