Easy Vegan Coconut Muffins ?⁠

This is such a quick and easy recipe, making for a delicious afternoon snack or bedtime treat.⁠
⠀⁠
To make this you’ll need…⁠
-1 +3/4cup oat flour⁠
-¼ tsp baking soda⁠
-⅓ cup maple syrup⁠
-1 cup canned coconut milk⁠
-2 tsp baking powder⁠
-¼ cup melted vegan butter⁠
-1 tsp vanilla extra⁠
⠀⁠
Method:⁠
1️⃣ Simply mix all ingredients together in a large bowl, then pour into a lined muffin tray.⁠
⠀⁠
2️⃣ Bake the muffins at 180C for 18 minutes, remove from the oven and let cool on a wire rack.⁠
⠀⁠
I love incorporating oat flour in my recipes as an alternative to plain white flour. Oat flour can be easily made by grinding rolled oats in a food processor. 2 cups of rolled oats will make 1 + ¾ oat flour.⁠
⠀⁠
Oats are an excellent source of magnesium, potassium, some b-vitamins, iron, protein and complex carbohydrates!⁠

This recipe makes enough for 6 muffins.⁠
