Easy Vegan Coconut Muffins ?

This is such a quick and easy recipe, making for a delicious afternoon snack or bedtime treat.

To make this you’ll need…
-1 +3/4cup oat flour
-¼ tsp baking soda
-⅓ cup maple syrup
-1 cup canned coconut milk
-2 tsp baking powder
-¼ cup melted vegan butter
-1 tsp vanilla extra

Method:
1️⃣ Simply mix all ingredients together in a large bowl, then pour into a lined muffin tray.
⠀
2️⃣ Bake the muffins at 180C for 18 minutes, remove from the oven and let cool on a wire rack.
⠀
I love incorporating oat flour in my recipes as an alternative to plain white flour. Oat flour can be easily made by grinding rolled oats in a food processor. 2 cups of rolled oats will make 1 + ¾ oat flour.

Oats are an excellent source of magnesium, potassium, some b-vitamins, iron, protein and complex carbohydrates!

This recipe makes enough for 6 muffins.
