Easy Vegan Chocolate Chip Blondies! I was inspired by my earlier post of the blondies with dates to whip up another recipe that uses chocolate chips.
These blondies have the best consistency – they are the perfect balance of chewy and dense, while still being moist and so flavorful.
▪1 1/3 Cup Flour
▪3/4 Cup Brown Sugar
▪1/2 Cup Vegan Butter, melted
▪1 Tsp Vanilla Extract
▪1/2 Tsp Baking Soda
▪1/4 Cup Vegan Chocolate Chips
▪1 Flax Egg: 1Tbsp Ground Flax Meal mixed
together with 3 tbsp water, let sit for 5 minutes

▪Preheat oven to 350 degrees.
▪Whisk together melted vegan butter, brown
sugar, vanilla and flax egg until smooth.
▪Add flour and baking soda. Mix until

▪Pour blondie batter into an 8×8 metal pan.
Press dough out evenly.
▪Bake for 25 minutes.
▪Cool before slicing.
