?Easy Sushi – Tamari Sweet Potato.
(Plus avo, carrot, capsicum & cucumber)
I’m still getting used to rolling sushi by hand, so these look (just a little) rough ? not to mention my blunt knife needs a good sharpen ?…. The thing I love about sushi is that you can add whatever leftovers and it still tastes awesome ?
?Cooked Sushi Rice
?2 Tbsp Rice Vinegar
?1 Tbsp Sugar
?1 tsp Salt
?Sweet Potato, cut into matchsticks
?Carrot, peeled & cut into matchsticks
?Cucumber, peeled & cut into matchsticks
?Red Capsicum, cut into matchsticks
Mix the rice vinegar, sugar and salt together in a pot and heat until sugar has dissolved then add to the cooked rice and gently mix through. Marinate sweet potato in tamari sauce, then lightly fry till soft. Cover a nori sheet evenly with rice leaving a strip clear at the top (see pics). Add some of each filling along the bottom. Tightly roll with fingertips while cupping hands. To seal, lightly water the top edge of the nori with cold water then finish rolling. Repeat with as many nori sheets as you like. Serve with soy sauce, pickled ginger, wasabi sauce or whatever you like. ??
