When the weather feels like terrible mood swings …. here’s one sattvic recipe to keep you calm with easy prep and simple ingredients.

Serve : 5 – 6
.
Ingredients:
▫️1 large Carrot (Chopped)
▫️1 large Corn on Cob (Decob)
▫️1 cup frozen Green Peas (Rinsed lightly)
▫️600g / 2 packs Silken Tofu (cut into bite size cubes)
▫️½ sheet Chinese Seaweed or Japanese/ Korean Seaweed for soup (rinsed)
▫️2 tablespoons Miso Paste. I prefer white miso but you can use others as well.
▫️1.5 litres Water
▫️Salt and Ground White Pepper to taste

Method:
▫️Bring water to boil in a soup pot. Add miso and mix well.
▫️Add carrots and corns. Reduce heat to a simmer, let it cook for 20 minutes till carrots are soft.
▫️Add green peas and tofu, increase heat to a gentle boil.
▫️Stir in seaweed, salt and ground white pepper to taste.
▫️Ready to serve.

This soup can be taken on its own or best paired with rice. Add a few stir-fries for a fuller meal.
