EASY PEASY PESTO PASTA.

This is an amazingly fresh and easy recipe that can be added to so many dishes. There’s times when I double the batch, and keep it in the fridge to dip into for lunches and dinners through the week. It’s that easy, and it’s that good… especially with pasta.

Ingredients.
For the pesto.
* 1/2cup of pine nuts (cashew, walnuts or pistachio substitute well).
* 1/2 bunch of flat leaf parsley (15g).
* 1/2 bunch of basil (15g).
* 3 cloves of garlic.
* 4 Tbsp of extra virgin olive oil.
* 1 Tbsp nutritional yeast or 30g grated Parmesan.
* Juice of half a lemon.
For the pasta.
* Pasta of your choice (300g).
* Large handful of spinach.
* 75g of French green beans, trimmed and halved.
* 120g of peas.
(Both tender-stem broccoli, asparagus, courgette or edamame beans also work well in this dish).

Method.
* Bring a large pan of salted water to the boil.
* Place all the pesto ingredients to a processor, season generously with salt and black pepper then blitz into a paste.
* Add the pasta to the boiling water. Meanwhile heat some olive oil in a pan, add the paste and soften to cook off the garlic.
* Add the beans, spinach, pea’s and sauté.
* Drain your pasta, and add to the mix. Season well, with salt, black pepper and extra virgin olive oil and stir until well coated.
