Easy peasy one pot cracked wheat & lentil kichdi loaded with protein/veggies topped with ghee & garlic tempering! This is a simple yet delicious week night meal which is easy to digest, hearty and healthy! Traditionally this recipe is made with rice and lentils. But this is my version of healthy kichdi. Coz who wants to eat soo many carbs on a weeknight, right?! See Recipe ⬇️

R.E.C.I.P.E – Serves 2
1. 1/2 cup cracked wheat
2. 1/2 cup split mung beans
3. 2 cups of your favorite veggies. I added carrots, string beans, peas.
4. 1 medium size tomato
5. 1/2 onion roughly chopped
6. 1/2 tsp turmeric
7. 1/2 tsp chili powder
8. 1/4 tsp garlic powder
9. 1/4 tsp oil
10. Salt to taste
11. 3 cups of water

Tempering:
2 garlic pods roughly chopped
2 tsp ghee (if vegan switch with coconut or sunflower oil)
1 tsp cumin seeds
1 tsp mustard seeds
1-2 dry red chili
4-5 curry leaves (optional)

Directions:
1. Add all the ingredients to a pressure cooker or instapot and cook on pressure setting for 10-15 mins. Let it cool.
2. Heat a small pan and add the ghee, garlic, mustard, cumin, red chili & curry leaves. Wait until the garlic turns slightly brown. Top the kichdi with the tempering and serve. Enjoy!
