Easy no bake gingerbread bites ๐
Good morning you lovely lot! Today I have yet another easy recipe for you using my favourite flavour combination of ginger and chocolate ๐คฉ๐คฉ๐คฉ
These little gingerbread dough bites are just delicious and so, so easy to make! ๐ I store these in the freezer (mine is in my cellar along with my washing machine + dryer) and Lizzy recently caught me scoffing a secret batch of them as as I was putting a load of washing in ๐คฃ You wonโt want to share these! ๐
Ingredients
100g almond flour
50g peanut butter
50ml maple syrup
20g crystallised stem ginger
1 tsp cinnamon
1/2 tsp ginger
100g melted chocolate
Method
๐ Chop the stem ginger into small pieces and add to a bowl along with all other ingredients except the chocolate
๐ Mix together until a sticky dough like consistency forms
๐ Use an ice cream scoop (or your hands would work to be fair) to scoop out evenly sized chunks of the dough and roll into balls
๐ Dip the balls in the melted chocolate, ensuring an even coating, and place on a tray lined with parchment paper
๐ Pop the tray into the freezer to allow the gingerbread dough bites to set
