Easy lentil coconut curry🥥🌱
This is a super delicious, easy and healthy dinner recipe! Perfect for meal prep and it’s vegan!!

– 1-2 tbsp oil
– 1 tbsp cumin seeds
– 1 tbsp coriander seeds
– 1 medium carrot, cut into cubes
– thumb size piece of grated ginger
– 1 tbsp turmeric
– 1 tbsp curry powder
– 2x400ml cans of chopped tomatoes
– 1x400ml can of full fat coconut milk.
– 1x400ml can of green lentils
– 250ml vegetable stock.

1. Heat the oil in a large pot and add in the cumin and coriander seeds. Fry for 1-2 minutes then add the carrots and fry for 5-6 minutes.
2. Add the rest of the ingredients into the pot and stir then bring to a boil.
3. Reduce to a simmer and let it cook until it is thick (roughly 20-30 minutes)

Serve with your favorite rice, fresh coriander, peppers and lime:)
