Easy and very filling vegan French toast!
A loaf of bread, I used an Italian loaf from Aldi’s
1 cup of any non dairy milk (I used vanilla almond milk)
2 tablespoons of corn starch
1 teaspoon of cinnamon
1 tablespoon of sugar
1/2 teaspoon of nutmeg
1 pinch of salt
Mix all ingredients into a shallow bowl or baking pan
Oil your pan unless you have a nonstick pan and set it to medium heat
Slice the bread into 1 inch slices
Dip both sides in mixture
Set the slices in the pan and cook for about 2-5 minutes on each side (I like mine a little on the burnt side!)
I mixed together 1/2 cup of maple syrup, 2 tablespoons of pecans and 2 tablespoons of coconut shreds and a dash of cinnamon to a pan and let it simmer on medium to low heat for about 15 minutes or longer.
Fresh fruit helps balance out the sweetness, so I added some banana slices and fresh raspberries on top.
