Earlier this week I had a breakfast plan to quickly whip myself up a kind of ‘frittata’ (cornmeal and quinoa flour based), but it all went horribly wrong π³π

I was rushing and just chucked my pre-frozen sliced potatoes into the frying pan – they ended up as a kind of mash instead of slices (last pic) π I reasoned it would be okay and added it to my mixture. What I ended up with was an unappetising blob in my pan π

Did I give up? Of course not π I rethought the situation and added sweetcorn to the mix. Instead I made them into little balls – they looked way more appealing than ‘the blob’. I accompanied the potatoes with salad (mixed leaves, spring onion, cucumber and rapeseed oil drizzle) and my green sauce from the freezer (details in a previous post).

I’m relieved to report it ended up being a delicious meal ππ And I had a batch to freeze for lazy days. #nowaste

Potato and sweetcorn balls:
– Mix: 30g cornmeal, 10g quinoa flour, chia and flax seeds, turmeric, sweet paprika, Herbes de Provence, salt and boiled water.
– Pan-fried: Sweet white onion, garlic clove and mashed potato.
Combine ingredients and make into little balls. I pan-fried mine, but you could air-fry or bake them π
