Stir Fry udon noodles with vegetables and tempeh

Place your tempeh in the freezer for 30 minutes so it can cut easily.
In the meantime, prepare your sauce ingredients:

1 tsp of garlic paste
1 tsp of ginger paste.
1 T of maple syrup
1/4 cup of soy sauce or aminos
1 T of sesame seed oil.
1 T of rice vinegar
1 tsp of onion powder.
1 vegetable bouillon cube
1 tsp of cilantro paste.
1/2 lemon juiced.
1 Tablespoon of tomato sauce.

Mix all the ingredients in a bowl together until smooth and thick.

Take your tempeh out and carefully cut into strips and place into your sauce to evenly coat each slice. Let it marinate for at least 30 minutes. Pan fry it for a few minutes and then add in your vegetables and cook for another 10 minutes. I think adding 1 small onion and letting it caramelize really adds to this dish. So be sure to add that with your vegetables. Add in your prepared noodles and stir to combine.
