DREAMIEST AND CREAMIEST – Homemade Peanut Butter Chickpea Curry – I used ManiLife peanut butter 😍⠀

Serves 4-6 people⠀

INGREDIENTS ⠀
1 white onion, finely chopped⠀
3 gloves garlic, crushed⠀
thumb of ginger, grated⠀
1 can coconut milk⠀
1 can chopped tomato⠀
2 (400g) cans of chickpeas⠀
1tsp cumin, coriander, paprika⠀
1/2 tsp cayenne pepper, chilli flakes, medium curry powder⠀
4 (BIG) tbsp MANILIFE peanut butter (I used Original Roast Crunchy) ⠀
1 bag 260g Spinach⠀
1 Vegetable stock⠀
⠀
METHOD⠀
1) Fry the onion on a medium heat using coconut oil for 6 minutes, then add the garlic and ginger and season with salt and pepper. Cook for a further minute.⠀

2) Add all the spices and peanut butter, stir continuously for a couple of minutes.⠀
⠀
3) Add the coconut milk, chopped tomatoes and vegetable stock, bring to a boil before adding the chickpeas.⠀
⠀
4) Simmer on a low heat for 10-15mintues. Stir in the spinach and leave on a low heat for 5 minutes. ⠀

Serve the curry with couscous or rice and garnish with coriander and Enjoy! ⠀
