Do you want a little immune boost? Then try this VERY green soup recipe. I absolutely love it, so nourishing and yummy.⁣

Vegan Very Green Soup⁣
Servings: 4-5 portions⁣

Ingredients⁣
Soup:⁣
❋ 1.5 tbsp extra virgin olive oil⁣
❋ 5 cups of dark green leafy vegetables eg bok choy, Swiss chard, kale; chopped⁣
❋ 1 medium-sized broccoli with the stem⁣
❋ 1 apple; de-seeded⁣
❋ 1/4 cup cashews⁣
❋ ~ 5 – 7 cups of water *⁣
❋ 1 organic cube of vegetable stock⁣
❋ 2 tbsp fresh coriander; finely chopped⁣
❋ Salt and pepper to taste⁣

Topping examples:⁣
❋ Plant yoghurt eg almond, oat or coconut⁣
❋ Sprouts⁣
❋ Seeds eg pumpkin, hemp⁣
❋ Coriander, chopped⁣
❋ Wholegrain bread⁣

Instructions⁣
1. Roughly chop the greens, the broccoli with stem and the apple. Heat the olive oil over medium heat in a big saucepan. Sautée the broccoli, the greens and the apple for 3-5 minutes until slightly browned. Now add the cashews and the vegetable stock and cover with water. The amount will depend on your pot size and how creamy you like your soup but should be around 5 – 7 cups.⁣

2. Put a lit on the pot and let the soup simmer for 10 minutes. Add the fresh coriander, take off the heat and let cool down completely before transferring to a high-speed blender. Blend the soup for 1.5 – 2 minutes or until completely smooth.⁣

3. Pour back into your saucepan, taste with salt and pepper and heat to preferred temperature before serving. Sprinkle with seeds, yoghurt or other toppings of choice.⁣
