Do you like savoury pancakes? And which are your favourite toppings when you make some?Here’s what you’ll need to make these mini savoury pancakes? 
•100 gr of buckwheat or oat flour
•1 tsp of dried oregano
•1 tsp of dried basil
•1 tsp of dried rosemary
•a nice pinch of salt
•3 tbsp of almond or cashew/coconut/soya yogurt
•1 tbsp of olive oil
•165 ml of water or plain almond/cashew/soya milk
For the toppings:
tomato sauce, rocket, fresh basil, pesto, vegan mozzarella and parmesan, plain almond/cashew/soya yogurt, nutritional yeast
Stir together the flour, dried herbs and salt in a bowl.
Add in the yogurt, olive oil and water mixing until the batter is completely smooth.
Heat a non-stick pan over medium heat and pour a spoonful of the batter using enough mixture to reach the pancake size you like. I made 6-7 little pancakes but you can make 3-4 larger ones.
Cook for 3-4 minutes or until small bubbles appear on the surface so you’ll know they’re ready to flip.
Continue until you use up the whole batter.
Let the pancakes cool slightly for a couple of minutes, then add your toppings. I made 3 different kinds. One with tomato sauce, mozzarella and basil, one with pesto and parmesan pieces and the last one making my own creamy cheesy spread mixing a couple of spoonfuls of plain almond yogurt mixed with a pinch of salt, 1 tsp of nutritional yeast and topped it off with rocket leaves and a drizzle of oil.
You can use different herbs if you like or spices like cumin, paprika, coriander, zathar and switch up the toppings to match the spices. Maybe hummus, a savoury yogurt dip, olive tapenade, harissa..options are endless?
