Do you like meals that are simple but packed full of flavour? Great, me too! And this one’s a regular for us. You can have it for lunch, as a side at dinner or even breakfast if you like ? ⁣⁣

Lentil salad⁣⁣
Serves 2⁣⁣
Ingredients:⁣⁣
⁣⁣
2 courgettes, chopped into 1cm circles⁣⁣
1 sweet potato, diced⁣⁣
1 red onion, quartered⁣⁣
2 carrots, chopped⁣⁣
1 red pepper, chopped⁣⁣
½ lemon, juiced⁣⁣
2 tsp olive oil⁣⁣
1 tin of green lentils⁣⁣
Optional: handful of coriander, roughly chopped⁣⁣
1-2 tsp harissa paste, I use Beluzu rose harissa⁣⁣
Salt & pepper⁣⁣

Method:⁣⁣
⁣⁣
1. Preheat the oven to 180degrees (fan). In a bowl add the veg, oil, plus the salt and pepper (the amount is to your own taste) and with your hands mix together until all the veg is coated. Spread the vegetables across your baking tray, making sure there is enough space (use two trays if needed.) Roast for 40 mins, making sure to turn the veg over at the 20 min mark. ⁣⁣
2. In a bowl combine the harissa paste and lemon juice. Empty the lentils into a mesh sieve and rinse/drain thoroughly. ⁣⁣
3. Once the vegetables are ready, take them out of the oven and let them cool for 10 mins. Add to a large bowl along with the lentils, coriander and the lemon juice/harissa mix. Gently toss making sure the dressing has thoroughly coated the veg and lentils. Season as needed!⁣⁣

Serve with a big dollop of hummus and pitta bread ? ⁣⁣
