DINNER TIME πŸ€‘ roasted miso aubergine πŸ† yeeeeees please 😈

Sorry for the silence on my main feed over the past week, I’ve been on my HOLIDAYS πŸŒ΄πŸ‡¬πŸ‡§ But, I’m back, refreshed and bursting with delicious recipes to share – starting with THIS. These miso aubergines are a popular recipe over on my website but I don’t think I’ve ever shared it on IG, so here is it: REMEMBER TO SAVE ❀️❀️❀️

Ingredients (serves 2):
πŸ† 2 large aubergine
πŸ† 2 tbsp miso paste
πŸ† 1 tbsp honey/maple syrup
πŸ† 1 tbsp olive oil
πŸ† 1 tbsp tamari/soy sauce

Method:
1️⃣ Cut the aubergines lengthways into two halves. Cut a crisscross pattern into the flesh of each half, being careful to not pierce the skin. Lie the aubergine onto a baking tray cut side up.

2️⃣ In a small bowl, mix together the miso paste, honey/maple syrup, olive oil and tamari/soy sauce until smooth. Spoon the marinade over the aubergine halves and use the spoon to push the mixture down into the cuts. Place the tray into the fridge for about 1 or 2 hours to allow the aubergine to absorb all the lovely flavour.

3️⃣ Preheat the oven to 180Β°c fan/200Β°c/360Β°f. Remove the tray from the fridge and place into the oven for for 45-50 minutes or until the aubergines are soft in the centre and the marinade has caramelised on the top.

4️⃣ Serve the miso aubergine drizzled in a little tahini with rice or anything you like. I have a super good recipe for wild herby rice to go with this that I will link in my stories.
