Plantain roast-
?Peel the skin off two medium size plantains. I leave a small layer of the inner skin on , because it adds a nice bite.
? Chop plantains into 1/2 inch cubes. Add them to a pot with 1/2 cup water, salt and turmeric.
? Cook the plantains in medium heat.
? Once the water it almost gone, the plantains should be cooked.
? in a separate ladle, heat 1 tbsp oil and temper mustard seeds, cumin seeds, curry leaves and red chilies.
? Add tempering to the plantains.
? This dish doesn’t need any special spice powders and is mild enough for kids too. (Remove the red chilies once the plantains are tossed in the tempered oil).
