Dinkel (spelt) full grain Bread

200 g. all purpose flour (type 550)
75 g. cake flour (type 405)
7 g. dry yeast
1 tablespoon honey
300 ml. lukewarm water
1 teaspoon salt
2 tablespoons olive oil

(Throw in the dough some walnuts and dried figs in pieces) ?

Preheat the oven at 230 degrees Celsius. Combine the flour, salt and olive oil and set aside. Combine the water, honey and yeast and set aside for 20 minutes. Combine all ingredients together, mix with a spoon and leave the dough covered with a damp towel for 2 hours.

Knead the dough until firm, shape it and put it on a baking sheet. Cover with the same towel and let it rest for another hour.

Bake for 15 min. at 230 degrees and then reduce the heat to 200 degrees and bake for additional 20 min.
