Dijon and Herb Potato Salad: This mayo-free potato salad is so good and perfect for a summer BBQ. It’s seriously my favorite potato salad?

Ingredients:
1 lb red potato (small, cut in 1/4)
1/4 cup olive oil
1 tbsp red wine vinegar
1 tbsp lemon juice
1/2 tbsp dijon
2 garlic cloves (minced)
1/4 cup parsley (finely chopped)
1/4 cup green onion (chopped)
2 stalks celery (sliced)
Salt and pepper to taste
Place potatoes in pot and fill with water (1” of water over potatoes) bring to a boil and then bring to a simmer and cook 5-8 min. Potatoes are done when you can pierce easily with a fork (do not over cook). Let potatoes cool. Mix together all the remaining ingredients except for celery, salt, and pepper to make dressing. Pour over potatoes and coat thoroughly. Add in celery, salt and pepper to taste. Serve!
