How about some fluffy pumpkin pancakes for a perfect start to the week?
Warning – this will not be the last pumpkin post😁 I’m feeling so autumnal now and still have ideas.

Dry ingredients:
~ 1/3 cup (40 g) quinoa flour
~ 1/3 (40 g) oat flour
~ 1 tbsp (10 g) tapioca flour
~ 1 tsp cinnamon
~ 1/3 tsp ginger powder
~ 1/2 tsp baking soda
Wet ingredients:
~ 2/3 cup (195 g) pumpkin purée
~ 1/4 cup (55 g) coconut cream
~ 1 tbsp apple cider vinegar

I recommend measuring the ingredients in grams on a kitchen scale. Mix all the dry ingredients, add wet ingredients and stir to combine. The batter should be thick but be able to run off the spoon slowly. Cook on the heated non-stick pan covered with a lid until brown edges (2-3 minutes). Flip and cook 1 minute more without lid.
