Easy, quick and . From the @thehappypear cookbook.
1 tablespoon oil
4 spring onions, chopped
3 cloves garlic finely chopped
Thumb sized piece of Ginger finely chopped
1 chilli (optional)
2 large tomatoes cut into eight
2 tablespoons curry powder
2 teaspoons cumin powder
1 tin coconut milk
1 tin green lentils, drained
1 tin kidney beans, drained
Juice of 1/2 lime
1 tablespoon tamari
Couple of large handfuls spinach
Small bunch of coriander
Heat the oil in the pan. Once hot add the onions, ginger and garlic (and optional chilli) for a few minutes.
2️⃣ Add the tomatoes and cook for a further few minutes.
3️⃣ Add all the curry powder and cumin, stirring and heating them up (a minute max)
4️⃣ Add the coconut milk, tamari, lime, tins of lentils, salt and pepper.
5️⃣ Leave to summer for 10-15 minutes, adding the spinach a the end.
6️⃣ Add chopped fresh coriander to serve
Serve with warm, buttered pitta.
