DEATH BY CHOC 🍫 FUDGE CAKE 🍰

Superb icing by @annajones. This was truly decadent! I really went to town with the icing, why not consume chocolate on chocolate on chocolate? Also relatively healthy (!)

DRY:
β€”1 1/2 cups oat flour
β€”2 1/4 tsp baking powder
β€”75g cocoa powder
β€”1/4 tsp salt
β€”1/4 cup & 2 tbsp erythritol (eg. @Natvia) or granulated sweetener

WET:
β€”1 tbsp molasses
β€”1 1/2 tsp apple cider vinegar
β€”75g olive oil
β€”1 1/2 cups & 1 tbsp plant/coconut milk (carton only. eg. @vitasoy).

ICING:
β€”100g olive oil
β€”1/2 cup & 2 1/4 tbsp natvia (or granulated sweetener)
β€”60ml water
β€”200g vg dark choc (80%)

RECIPE: Combine dry. Combine wet. Combine wet & dry. Loaf tin. 180c, 40 mins. Rest in tin 30 mins. Cool.

ICING: stovetop, heat all ingredients except chocolate. Don’t boil. Hot? Turn off. Add & melt dark choc. Ice cake immediately (starts setting). Garnish finely chopped freeze dried raspberries.
