DAY THREE of cheap & easy vegan dinners ☺️☺️

This is a really simple but DELISH plate of lentils and roasted veg. I used tinned lentils which are pretty cheap and no nonsense as you don’t need to soak them. The method is super simple you pretty much just roast the veggies and heat up the lentils, all with some yummy spices and you’re done!

Ingredients:

– 1/4 tin green lentils, rinsed
– half a medium carrot
– 1 small sweet potato
– Half a small red onion, roughly chopped
– Handful sliced mushrooms
– Couple cherry tomatoes
– Garlic oil (or any oil mixed with some crushed garlic)
– 1tsp chilli flakes
– 2-3tsp maple syrup
– Pinch of cumin
– Salt
– Pepper

Method:

This one is so easy!! Start by throwing the chopped sweet potato in a roasting tin along with the carrot (I chopped mine into batons). Drizzle over some olive oil, along with a dash of maple syrup and some salt and pepper. Roast for 10 mins. Meanwhile, remove the lentils from the tin and drain and rinse them in a colindar. Then add the onions, mushrooms and tomatoes to the roasting tin with the carrots and sweet potatoes. Add some more salt and pepper along with the chilli flakes and cumin. While you allow the veg to roast for another 10 mins, pop the lentils into a frying pan on medium heat with some of the garlic oil, salt and pepper. Tinned lentils are pre-cooked so you only really need to heat them up for a couple of minutes. At this point, the veg should be done so you are ready to plate up!
