Day 15 ? this time I decided not to use my breakfast as the first picture (mainly because these vegan chocolate cookies are more pleasing to look at ?) We‘re running low on butter/margarine so this recipe was perfect for me! You only need:

– 1 cup of sugar
– 1/2 cup of cocoa powder
(instead of these two ingredients I used 1 1/2 cups of cacao drink powder)
– 1/3 cup of oil
– 1 tbsp if ground flax seeds (I think you could skip the flax seeds tho)
– 1/3 cup of non dairy milk
– 1 tsp vanilla (I didn’t have any)
– 1 1/4 cups of flour (I used spelt flour)
– 1 tsp baking powder
– 1/4 tsp salt (don’t skip this!!)
– powdered sugar for rolling the dough balls in before baking

Just mix everything with a spoon until just combined, make golfball sized balls, roll them in the powdered sugar and bake them at 350°F (180°C) for 10-12 minutes (they will be a bit soft when you take them out but trust me) ? so for breakfast I had some vegan caramel pudding topped with chia chocolate pudding and cacao nibs. For Lunch I made some fried potatoes with brown lentils (I prepared the lentils for our dinner and cooked way too many, that’s why ?) and for dinner we had spaghetti with brown lentil bolognese and our last piece of fresh vegetables ?
