1️⃣ Preheat oven to 200 degrees. Wrap aubergine ? in silver foil for approx 1h 30m until soft. Chop into cubes and set aside to cool.
2️⃣ Heat 2 tsp olive ? oil ? into large pan. Add 1 medium diced onion ?, 2 sliced sticks of celery, 2 sliced sticks of carrots ? for about 15 mins until softened.
3️⃣ Add 500g extra lean beef mince (5% fat), you can use turkey but I preferred this! Add 4 gloves of garlic, I used @verylazyfooduk garlic.
4️⃣ Add aubergine ?, 1 can of tin of tomatoes ? and 100g sundried tomato pesto and simmer for 30 minutes.
5️⃣ Reduce oven to 190 degrees Meanwhile whisk together 1 tbsp of low fat butter ?, 300ml milk ? and 1 tbsp of flour in a small pan until it starts to bubble.
6️⃣ Add 40g half fat cheese ? and stir. Season to taste. I added pepper ? and salt ?.
7️⃣ Spoon a third of meat sauce into ovenproof dish, ? top with 3 pasta sheets then a third of the cheese ? sauce. Repeat with the remaining meat sauce, 3 sheets and rest of cheese ? sauce.
8️⃣ Scatter 20g of half fat cheese ? and parmeasan, I used @skinnyfoodco vegan cheese ?
9️⃣ Bake for approx 35-45mins. I had to bake for approx 1hr due to an electric oven ?
? Serve with chips ? , salad, veg or garlic bread ?.
I personally didn’t eat the chips or veg as I was stuffed on this ?
